Brownie Bites

Yesterday morning I decided to make Brownie Bites. I had purchased this pan (along with the brownie pan) during a friend’s virtual Pampered Chef party and hadn’t even used it yet so yesterday was THE day.

Of course I had all the ingredients because, well, I’m a baker so tend to keep these things on hand. I whipped up the recipe below and proceeded to load up the squares in the pan. Big mistake! Don’t load them to the brim. Fill half full. (Tip: I used a cookie scoop.) If not, you’ll have some difficulty getting them out of the pan. Be sure to spray the pan well with PAM. When done, let cool in pan for 5-8 minutes, then take a spatula and run around the edges to help lift the brownie bite out.

And you’ll have wonderful little brownie bites which you can pop into your mouth when that sweet tooth needs to be satisfied. They’d be great a la mode as well. Imagine a warm brownie bite, some cold vanilla bean ice cream, a dollop of whipped cream and a cherry!

Brownie Bites


Ingredients

  • 1 1/3 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup baking cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup pecans, chopped
  • 2/3 cup vegetable oil
  • 4 eggs, beaten
  • 2 teaspoons vanilla extract
  • 1 cup pecans, chopped

Instructions

  1. In a mixing bowl, combine the first six ingredients.
  2. In another bowl, combine oil, eggs and vanilla; add to dry ingredients. Do not overmix.
  3. Half fill brownie bite squares. Sprinkle with nuts if desired.
  4. Bake at 350 degrees for 20 minutes or until a toothpick inserted in the center comes out clean.
