Chamomile Tequila Sour

I wonder if this cocktail is the quintessential nightcap? I mean isn’t Chamomile tea known as the “night time” tea?  Don’t worry, though, you won’t fall asleep with the glass in your hand.   I’ve taste tested a few – you know, just to be sure the recipe is accurate and I have to say I have not yet dozed off . . . not yet, being the operative words!  I think there is something in the Chamomile tea that is somewhat addicting as I find I crave this cocktail.

Chamomile Tequila Sour


Ingredients

Chamomile Simple Syrup

  • 4 Chamomile tea bags
  • 1 cup sugar
  • 1 cup water

Chamomile Tequila Sour

  • ½ cup kosher Salt
  • 1 lime wedge, plus 1 ounce fresh lime juice from about 2 limes
  • 1¾ ounces tequila
  • 1½ ounces Chamomile Simple Syrup

Instructions

  1. For the Chamomile Simple Syrup: Combine water and sugar in a small saucepan over high heat. Stir to dissolve the sugar and bring to a boil. Immediately remove from heat and add the chamomile tea bags. Steep for 30 minutes then remove the tea. Cool to room temperature and refrigerate.
  2. For Each Cocktail: Place the salt in a small, shallow plate in an even layer. Moisten the rim of a coupe glass by running a lime wedge around the rim. Dip glass into salt and set aside. Combine lime juice, tequila, and chamomile simple syrup in a cocktail shaker. Fill with ice. Shake until well chilled, about 15 seconds. Strain into the salt rimmed coupe glass and serve.
