Fudge Brownies

Oh my, don’t those brownies look delicious? Well, they most assuredly are very good. I could eat these for breakfast. In fact, growing up I would often eat something sweet for breakfast. The usual breakfast consisting of eggs, bacon or sausage, grits, etc. would make me sick to my stomach for some reason. It was weird, but I eventually grew out of it. Now, I love a good breakfast.

These brownies are so good, so moist and so fudgy. They’re great for a picnic, or dessert for a family gathering. Even a la mode. If you choose the latter, be sure to warm your brownie in the microwave for 10-20 seconds then top with your favorite ice cream and syrup if you want to get extra fancy. Add a little whipped cream and a cherry. Now, that’s a dessert that’s good anytime!

Fudge Brownies


Ingredients

  • 1 1/3 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup baking cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup pecans, chopped
  • 2/3 cup vegetable oil
  • 4 eggs, beaten
  • 2 teaspoons vanilla extract
  • 1 cup pecans, chopped

Instructions

  1. In a mixing bowl, combine the first six ingredients.
  2. In another bowl, combine oil, eggs and vanilla; add to dry ingredients. Do not overmix.
  3. Spread in a 13-in x 9-in x 2-in baking pan. Sprinkle with nuts if desired.
  4. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted in the center comes out clean.
