Homemade Pimento Cheese Rounds

I came across this recipe recently and had to try it. Its very much like the traditional Cheese Straws except for the diced pimentos which definitely adds a different flavor to the crackers. Well worth the bake! Quick and tasty – try them today!

Ingredients

  • 1 4-ounce jar diced pimentos
  • 1 teaspoon ground dry mustard
  • 1/2 teaspoon red pepper flakes
  • 1 1/2 cups all-purpose flour
  • 2 1/2 cups finely shredded sharp cheddar cheese
  • 1/2 cup olive oil
  • 1 teasoon salt

Instructions

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. Drain the pimentos and pat them dry with a paper towel. Chop them finely and set aside.
  3. In a bowl, combine the flour, ground dry mustard and red pepper flakes. Add the chopped pimentos and mix too coat.
  4. In another bowl, beat the shredded cheese, olive oil, and salt until well combined. Add the flour mixture and mix until just combined. Knead slightly with your hands to evenly distribute the pimentos.
  5. Lightly flour your work surface and divide the dough into two equal portions. Roll out one portion at a time to 1/8 inch thickness. Use a round cookie cutter to shape the dough as desired.
  6. Place the shapes 1/2 inch apart on the prepared baking sheets. Bake for 15-20 minutes (17 minutes gives perfect crispiness). Cool on a wire rack before storing.
  7. Once completely cooled, store in an airtight container.
