These are the most delicious egg bites ever. Apparently they are very much like the egg bites you get at that popular coffee shop. I’ve never had them so can’t compare. All I do know is these are very good and a chocked full of protein – 7 grams to be exact per egg bite and only 84 calories per egg bite. Can’t beat that!
I do use a silicon muffin tin which makes baking these so much easier. They just pop out! I make bigger ones in a large muffin pan for my husband. He toasts an English Muffin and heats up an egg bite and makes a delicious breakfast sandwich!

Egg Bites
- Total Time: 50 minutes
- Yield: 24 egg bites 1x
Ingredients
- 18 eggs
- 1 cup cottage cheese (full fat)
- 1 cup shredded cheddar cheese
- 1 teaspoon pepper
- 1 teaspoon salt
- bacon, chives, tomatoes, sausage, spinach, etc.
Instructions
- Preheat the oven to 300 degrees Fahrenheit. Place a cookie sheet underneath the rack and fill with water. This will produce steam and create a more humid environment.
- Grease a muffin tin. For best results, use a silicon muffin tin.
- Add the eggs, cottage cheese, shredded cheese, and seasonings to a food processor or blender. Blend until smooth. Be careful not to over-blend and incorporate too much air. This can cause the egg bites to deflate.
- Pour the egg mixture into the muffin cups. Fill up each cup about half way. Add your bacon, chives, and any other ingredients on top.
- Place the muffin tin in the oven for around 35–37 minutes. You want them to be totally set.
- Remove from the oven and enjoy.
Notes
I place mine on a cookie sheet with parchment paper and put into the freezer to freeze. I think place in gallon zip loc bags. This allows me to pull out as many as we might need. I thaw in the refrigerator and heat in the microwave for about a minute before serving.
