I found this recipe online a few weeks ago so we had to try it. Any chance we get to use the Blackstone is a win in my book.
This dish is quite tasty which I attribute to the Goya Sofrito Sauce. It definitely adds another level of flavor which makes the entire dish!
Try it and oh, you don’t have to have a Blackstone to make this dish. It could be made in a cast iron pot or a Dutch oven.

Griddle Jambalaya

- 1 pound chicken breast, cut into bite size pieces
- 1 pound smoked sausage, cut into coins
- 12 large shrimp (peeled and deveined)
- 3 cups cooked white rice
- 2–3 tablespoons Cajun seasoning
- 1 medium onion, chopped
- 1 large red bell pepper, chopped
- 1 large jalapeno, minced
- 1 clove garlic, minced
- 24 ounce jar Goya Sofrito Sauce
- 2 green onions, chopped
Instructions
- Oil griddle and cook vegetables until they start to soften.
- Then add chicken, season with Cajun seasoning.
- Once chicken is half cooked, add smoked sausage.
- Once everything is almost done, add rice.
- Then add shrimp, season with Cajun seasoning.
- Add garlic.
- Once shrimp is pink, mix all together.
- Add Sofrito sauce, mix well. Spray with water to keep moistened until ready to eat.
- Garnish with green onions. Enjoy!
