Griddle Jambalaya

I found this recipe online a few weeks ago so we had to try it. Any chance we get to use the Blackstone is a win in my book.

This dish is quite tasty which I attribute to the Goya Sofrito Sauce. It definitely adds another level of flavor which makes the entire dish!

Try it and oh, you don’t have to have a Blackstone to make this dish. It could be made in a cast iron pot or a Dutch oven.

Griddle Jambalaya

Ingredients

  • 1 pound chicken breast, cut into bite size pieces
  • 1 pound smoked sausage, cut into coins
  • 12 large shrimp (peeled and deveined)
  • 3 cups cooked white rice
  • 23 tablespoons Cajun seasoning
  • 1 medium onion, chopped
  • 1 large red bell pepper, chopped
  • 1 large jalapeno, minced
  • 1 clove garlic, minced
  • 24 ounce jar Goya Sofrito Sauce
  • 2 green onions, chopped


Instructions

  1. Oil griddle and cook vegetables until they start to soften.
  2. Then add chicken, season with Cajun seasoning.
  3. Once chicken is half cooked, add smoked sausage.
  4. Once everything is almost done, add rice.
  5. Then add shrimp, season with Cajun seasoning.
  6. Add garlic.
  7. Once shrimp is pink, mix all together.
  8. Add Sofrito sauce, mix well. Spray with water to keep moistened until ready to eat.
  9. Garnish with green onions. Enjoy!
