I came across this recipe recently and decided to give it a try. Oddly enough I’ve only recently begun my love affair with Brussels Sprouts and it’s safe to say I am completely in love with them. Prepared any which way, it seems. However, with that being said, this recipe has to be my favorite . . . so far.
It was originally touted as a recipe for an appetizer and it can certainly serve in this capacity. My experience is that whether you serve it as an appetizer or a side dish greatly depends on the size of the Brussels Sprouts. You see, the larger ones work better as an appetizer and the smaller ones work better as a side dish.
Of course, that is strictly my opinion. You can’t go wrong either way. Your family or guests will love this dish! I promise!

Roasted Brussels Sprouts with Blue Cheese and Bacon Bits
Ingredients
- 1/2 pound brussels sprouts, trimmed and halved (about 2 1/2 cups)
- 1/2 tablespoon avocado oil
- 1/3 cup blue cheese crumbles
- 1/3 cup bacon bits
Instructions
- Preheat the oven to 400 degrees.
- Line a baking sheet with parchment paper.
- In a bowl, toss the halved brussels sprouts with the avocado oil, and salt and pepper to taste.
- Place them cut side down on the prepared baking sheet. Roast for 12-15 minutes until they start to brown and soften.
- While the brussels sprouts are roasting, crumble the blue cheese.
- Once the brussels sprouts are roasted, remove them from the oven and flip them over so the flat side is facing up. Top the brussels sprouts with bacon bits and blue cheese crumbles.
- Return the brussels sprouts to the oven and bake for an additional 10-15 minutes or until the bacon is crispy and the cheese has melted.
- Remove from the oven and allow them to cool slightly before serving.
